  2. I know you figured someone was going to ask this, lol, so here goes; you said bake until chicken is 165 degrees. How long did it take yours to reach that temp? I don’t have a reliable thermometer.

  4. This was great Mayra, but I also tried a simple no carb version, I may be biased, but thought it was pretty good! You can add more spices, but I did it really basic: put 4 chicken thighs in plastic bag with 2 eggs beaten, shook, put in fridge 30 minutes, then rolled each piece in bowl with Pork rind crumbs, then added salt & pepper to each side as you turn it over in covered fry pan with 2 TB of melted bacon grease(or coconut oil), cook for approx 12-14 min. per side, or till done.

    1. @Chris Maracich – Thanks, and I just wanted to get my “fried chicken fix”, with what I had on hand, and this worked well. The pork rind crumbs stick so much better when the egg coated chicken is chilled, and cooking them bacon grease really adds a little extra flavor. I might have added more seasoning if I had it, but the liberal use of Redman’s salt & fresh pepper provided good flavor.

  6. Let the coating on the chicken rest on parchment for about 15 minutes or so before frying. That will make it stick a lot better and not fall off as much. Great recipe!

    1. I put any coated meat that I’m going to fry in the fridge until ready to use One hour to as many as eight hours. It helps for the crumbs to stick better as mentioned in the comment above.

  7. For those who don’t like to use buttermilk, you can use CHICKEN STOCK as brine and let it sit overnight!

    And for those who don’t have instant buttermilk, here’s how to make an alternative.

    1 cup of any milk you prefer
    1-2tbsp vinegar
    Stir and let it sit for 5 minutes until you see some bubbles. 🥰

    1. Actually, it’s 1 Tablespoon of vinegar + enough milk to equal 1 cup…

      (So, essentially…3/4 cups + 3 Tb milk + 1 Tb vinegar)

  9. This looks great!!! What can you use in place of the protien powder for those of us who do t have that? Can u use coconut flour, tapioca flour or almond flour??

  10. You can use heavy cream or plain Greek yogurt combined with a splash of an acid (vinegar, lemon, lime, etc.) to make buttermilk. Let it sit overnight in the fridge.
