  3. I love jicama!! To me it tastes likes a cross between an apple and a pear! It’s so delicious eating it raw or even cooked down and used in “apple” pie. Haven’t tried it yet in potato salad but will definitely be using it to make this potato salad recipe for July 4th!! The only drawback with jicama is that it’s a pain in the tush to peel, but so worth it once you try it!!

  4. Girl I’ve been eating jicama my whole life! Especially in gazpacho 😋 But never once in my life did it ever occur to me to boil it 🤯

  5. I’ve been using turnips as my potato substitute. I just read jicama has like 58 carbs per medium jicama, but also 32 grams of fiber, so 26 grams net carbs. Half of that jicama would then only be 13g net carbs, I didn’t know that!😍 I’m definitely going to try this over the summer!

    1. Yes I wanted to check out the carb count as I’m a diabetic and a lot of keto recipes can be used for us but if we have to be strict, it might be off the menu.

  7. Believe it or not, I use Cottage Cheese as a base with added Avocado, Red Pepper, Onion, etc etc also with fresh/frozen Dill. And semi soft boiled eggs of course👍👍

  8. Mmm looks and sounds delish! Can’t wait to try this. I use Jicama for my fathead dough apple turnovers I think that’s why I like Jicama so much it’s versatile and even tastes great just by itself.

  10. Thank you! Perfect timing. I agree: summer-potato salad-chicken-coleslaw (sounds like KFC!) — and iced tea. I appreciate your even showing us how to peel it. I don’t think I’ve even ever bought a jicama. I’ll look for one today. The only other way I’ve seen jicama used is sliced into sticks.
