Stir in frozen peas and corn and cook until warmed through, 3 minutes more. Season with salt and pepper.

Transfer the mixture to oven glass dish and top with an even layer of mashed cauliflower and bake 20 minutes or until is golden.
Garnish with parsley and serve.

2 Beef egg muffin 170 calories (4 serving).


1 pound ground lean beef.
1 tsp onion powder.
1 tsp garlic powder.
1 tsp paprika.
salt and black pepper.
3 egg white.
3 eggs.
1 tablespoon parsley.
salt and black pepper.
1 medium tomato.
1 oz grated mozzarella.

Preheat oven to 390 °

. In a medium bowl, include the beef, salt, pepper, garlic powder, onion powder and paprika. Use hands to integrate. set aside.

In a different bowl, include the eggs, salt and pepper and blend until integrated. Include the chopped tomatoes, mozzarella and parsley. Reserve.

Divide the meat amongst the muffin tin openings, pressing to form cups. Pour some egg mixture into each meat cup.

Bake for 30 minutes. Enable to cool prior to serving.

3 High beef cauliflower fried rice 310 calories (1 serving).


1 tsp olive oil.
1 1/2 cup riced cauliflower.
salt and black pepper.
5 oz ground lean beef.
1 garlic.
3 oz broccoli florets.
1 tsp soy sauce.
salt and black pepper.

4 vegetable spinach rolls 60 calories (5 serving).

Active ingredients.

8 oz frozen spinach leaves.
3 egg whites.
1 egg.
1/4 low fat mozzarella cheese.
salt and black pepper.
1 clove garlic.
1 tsp olive oil.
1/2 onion.
1/2 red bell pepper.
1 medium carrot shredded.
1.5 tbsp parsley.


Preheat oven to 400 ° F( 200 °
C). Defrost the spinach and squeeze out the water.

Mix spinach, 3 egg whites, mozzarella, half the salt, and pepper in a blending bowl.

1 clove garlic.
1/2 onion.
1 mushroom.
salt and black pepper.
4 oz ground turkey.
1.5 tablespoon parsley.
1 egg white.
1/4 tsp italian spices.
4 tbsp tomato sauce.


Pre-heat the oven to 350 ° f.

  10. For the spinach roll, I’m wondering how well it’ll hold together as “wrapper”, has somebody tried different spread thickness? Also, I imagine a filling with asparagus and/or red swiss chard would look similarly pretty and be lower in carbs than carrots and red pepper. Or maybe some sort of eggplant/zucchini or tofu and cheese filling with rosemary might work. I like how many of these recipes give ideas but leave space for variation.

    1. I made that wrap several times and it held. But cutting it was a nightmare and it fell apart completely when i tried. But i guess that depends on how thick you make it.

    2. @Thea M I made it last weekend just for trying it out. I recommend oiling the parchment paper before you bake the wrapper because it’s very difficult to peel off that intact. I made it fairly thick (like. 8mm or so?) and it held well for both rolling and cutting, I was surprised. However, my filling was super bland and it made the whole thing boring and not worth it. Perhaps a strongly tasting cheese or chili in the filling would have given it a kick, and it really needs a different texture like roasted walnuts or something for a crunch. Maybe olives..
