is an extremely easy to make cake that is moist and delicious—perfect for brunch or afternoon tea! 😋

¾ cup (210g) plain Greek yogurt
3 large eggs at room temperature
1 teaspoon (4mL) vanilla extract
⅓ cup + 1 tablespoon (83g) melted coconut oil or butter
2 cups (200g) blanched almond flour
⅓ cup (65g) granulated erythritol
2 teaspoons (8g) baking powder
¼ teaspoon (1g) salt

Bake at 350°F(180°C) for 40-50mins

    1. I may try that instead of just vanilla. Mine has a coconut oil after taste that is just not what I wanted or expected. I love how moist it is and the texture now is matter of adjusting the flavor to perfection. Thanks for the suggestion to add lemon 🍋.

  17. I made this last night – it’s aaa-mazing. It was my first time using Lakanto Monkfruit Sweetener Golden. In addition to vanilla extract, I did add 1/2 teaspoon of almond extract. This cake would be a good base for strawberry shortcake. By the way, I don’t even do Keto, but loved this cake.

    1. I thought about adding the almond extract as well, I started yearning for almond cake as soon as I read the title.

    2. I added the almond extract too, the name just begs for it. I don’t eat Keto and I like a lot of the recipes. It’s the no sugar that works for me. 25 yrs of sugar abstinence.

  19. OMGOSH! I made this yesterday! Everyone! Listen! It’s SOOOO easy and SOOOO delicious! I’m not a yogurt girl, but being Keto and a fan of fat, I substituted Creme Fraiche for the yogurt (creme fraiche is a luxuriously thick, rich cream (with a slight tang) that is used as a finishing touch for sauces or soups, or spooned over berries or desserts!) WOW. WOW. WOW. I did everything as our beautiful chef instructed, except that I added 1/3 tsp. of Almond extract, in addition to the Vanilla, and sprinkled the top with powdered Bocha Sweet as soon as it came out of the oven— and again after it had cooled! Ketoserts: You are a lovely genius! Thank you so much!! ❤️😀❤️
