A note on chorizo:
Throughout most of the western hemisphere, “chorizo” is Mexican chorizo, which is ground pork and seasonings, purchased uncooked and then fried up. Spanish chorizo, on the other hand, is put in casings, cured and dried (similar to pepperoni).
I’d have to grind up Spanish chorizo, otherwise, this looks really good.

I do the same with my chorizo juice & fat… and I switch it up as to whether I use Mexican chorizo or chorizo from another “culture” for lack of way to put it… Argentinian chorizo is one of my very best favorites… and you HAVE to put Dijon or even mustard & horseradish into the Mayo for shrimp salad… egg salad as well!
