Atkins Diet Recipes: Fast Low Carb Cheese Bread 2022

In a look for a great bread option that I can make quickly without a bread maker, I found this fantastic dish by Jennifer Eloff (). It's best toasted, however also makes a mean french toast as well. It holds up well to being dunked in addition to holding your sandwich together.

Fast Cheesebread

1 cup ground almonds
2/3 cup gold flax meal
1/3 cup important wheat gluten
1/3 cup vanilla whey protein
4 tsp baking powder
1 cup Shredded Cheddar
1/4 cup butter
2 eggs
1/2 cup heavy cream/water mix

Mix Dry components together in large bowl. Cut in the butter. In a different meal, beat eggs and then add the heavy cream mixture. Stir egg/cream mix into the dry components simply till combined. Scrape into 8×8 well-greased baking pan.

Prepare at 350 for 35-45 minutes up until placed knife comes out clean.

When done, let cool, and cut the bread into quarters. Each quarter is additional cut into 3 pieces.

Yield: 12 pieces, 1 piece:
152 calories: 10g protein; 12 g fat; 2.25 g carbohydrates

    I efficiently lost weight (15 lbs a month) when staying above 90g protein and below 900 calories with Atkins. Combining low calorie and Atkins concepts does wonders.

  3. @lgpars Correct. I use the upper piece with crust to hold, slice, flip over so other crust is on top, slice the remainder piece in half. Yes, what you suggested is correct — my only tip would be to cut from the “crust” side.

  5. @bowulf Aww..OK I see what you mean now. This looks delicious and I can’t wait to try it. I watched your Cheese Bread and White Pizza videos and am starving now! Will have to make a grocery store run. Thanks so much for sharing as I need some diversity in my low carb diet. I started last June and have lost about 30 lbs. Would like to lose some more and keep it off but I need some good recipes like this.

  9. The cheese bread looks magnificent! Thanks for showing us the recipe, Kent. In your honest opinion, how does it compare with ordinary bread?

  10. In my cookbook, we do put in the metric measurements for each recipes. I am afraid that most of my measurements would be off if I tried to get it right per recipe. I’ll try to put them in the recipe section in the future. It will however be volume not weight measurements — so mL instead of grams.

  11. I’ve been doing this diet for about 8 months. I started at 230 pounds, i’m now at 185. this diet was hard at first but now it’s the norm in our house.

  13. Hey first I’d like to say I love your videos and thanks for sharing your ideas with us…I’ve been doing lc for about 5 months now I never buy the shredded cheese because it has flour in the ingredients. Is that not an issue for you? I thought it’ll mess up weight loss

  14. Thank you for this recipe. I am starting Atkins and my biggest pitfall is bread. As tedious as it gets, this is the best way to do it, make it yourself.
