Atkins Diet Recipe: Low Carb Eggplant Parmesan (IF) 2022

In another dish coming out of Jennifer Eloff's amazing cookbook, Superb Low Carbing, I prepare a food that I most likely would have swore I would never ever consume– eggplant. In just another among those amazing things that lifestyle brought to me, my taste buds have actually altered. I now like eggplant well enough to voluntarily eat it.

Active ingredients:
1 Medium Eggplant, thinly sliced
1 cup of grated parmesan
2 eggs
1 pound ground beef, browned
8 oz Sausage, browned
2 cloves garlic
1.5 cups of No Sugar Included Spaghetti Sauce
1 cup Mozzarella Cheese, shredded

Nutrition information per serving:
456 Calories, 33g Fat, 9.3 Overall Carbs (minus 3.3 g fiber), 30g Protein.

  4. @lilyflowertulip Both of those sound delcious. I know of a few recipes like yours that describe it as eggplant lasagna. It would be perfect for those vegetarian Atkins people too. It’s hard to believe people would say we are eating unhealthy!

  5. OMG! This was good. Our grown children all love eggplant. We once grew it in our garden when we were young enough to grow a garden. I made a double portion, had all the kids over and there was not a morsel left. I should make more next time. Thanks.

  6. I am new to low carb life style and I must say that I really enjoy your work! I mean I try to watch my cals too… The nice thing I really love about low carb foods is that you can always double your servings and get less cals. For ex: This meal is 456 cals with 6 servings. 456 x 6= 2736 now make this 12 serving and you can cut that cal and carb amount down 228 cals and 4.65 carbs ^;^ I love you man! New scrib!

  8. im on the keto diet, and ive been doing eggplant with a pork rind breading, i hadn’t thought to use parmesan!! thanks a bunch, i will be trying this next week.

  9. This evening, I made this with a different sauce (one that’s even more low-carb than Ragu, but more expensive, is the Mario Batali cherry tomato Marinara sauce) and no meat. It is SO good, and guilt-free. Thank you very much for sharing!

  10. Bought the ingredients for this recipe yesterday n its in the oven right now cooking. Sunday dinner, low carb peanut butter n unsweet chocolate chip ice cream and football …. Cant get better than this.
